This afternoon I was back in the kitchen doing some more cooking. Well, it was more like mixing, baking, and chopping instead.
I started with something super easy today. This Zesty Avocado Salad Dressing from a recipe that I found on Pinterest. I wasn’t sure if I was going to like it or not, but thought that I would give it a try. I liked everything that it called for, so why not? I got it all mixed up and it smelled good, so I gave it a little taste and was surprised. It wasn’t too bad.
Definitely better than it looked. It can be used as a salad dressing, a dip for veggies, or in place of mayonnaise. Since this took me all of about 10 minutes to make, start to finish, I decided to give another Pinterest recipe a try.
I made this recipe a few weeks ago, but it didn’t turn out anything like the picture on the website. This time I didn’t make it exactly like they did because I wanted to make them a little bit healthier. This is the recipe I used to make my Peanut Butter Raisin Granola Bars. Instead of the coconut flakes and chocolate chips I used a 1/2 cup of raisins and I cut the amount of honey in half and put in 2 tablespoons of peanut butter.
You mix all the dry ingredients first.
Then whisk together the wet ingredients.
Combine the ingredients until well coated.
Then put the mix onto a well sprayed 9 x 13 cookie sheet! This is important or it will stick. I used the parchment paper that is suggested and it stuck the first time I made it.
I didn’t use parchment paper this time. Just a pan and sprayed it very well with cooking spray, and they didn’t stick!
Let them cool about 10 minutes before cutting, so they can harden some. This batch came out better, but still a little crumbly in spots. Delicious though!
While the granola bars were cooking, I chopped up some fresh vegetables and hard-boiled some eggs for tonight’s dinner.
The rest of the afternoon was pretty relaxing until it was time to go run.
Since we ran pretty hard yesterday and we are running again tomorrow morning, we made tonight’s run a nice and easy 5 miler. The weather was pretty much the same as yesterday, but since we got out there just a little bit earlier, it was a little warmer. Tonight’s run felt good though!

We had chicken salads for dinner tonight.
I had lettuce, tomato, cucumber, onion, mushrooms, a hard-boiled egg, and chicken. I was brave and decided to try the Zesty Avocado Dressing on my salad tonight. It was so good and I only needed to use 3 tablespoons of it for this big of a salad. I will definitely be making more of this dressing in the future.
I have a couple more recipes planned for tomorrow. I will also be completing the Chicken Ratatouille meals, as that is what we will be having for dinner! I will post a picture of the finished product on blog tomorrow.
