Here is the recipe for my version of the Baked Apple Cinnamon Oatmeal from my last blog post.

It is very simple and quick to make, which I love. You can make it up ahead of time, put it in the fridge and heat it up in the morning for a quick, healthy breakfast. If it is too dry for you, just add a little bit of milk.

My recipe only makes 2 servings, but you could easily make it a double batch. This is all you need to make this delicious oatmeal.

1 cup of the oats – uncooked

2 tbsp of brown sugar

1/2 tsp of cinnamon

1 granny smith apple – medium – about 160 grams

1 large egg white

1/2 tsp vanilla

3/4 cup of Almond or Skim Milk (I use Almond Milk)

First, mix all the dry ingredients together in a bowl.

Cut the apple (with the skin on) and add it to the dry ingredients.

Then in a separate bowl whisk the egg white, almond milk, and vanilla.

Combine the all the ingredients and mix well.

Put mixture into a glass bowl sprayed with cooking spray, cover, and bake for 25 minutes at 325 degrees.

After 25 minutes, uncover, and bake for an additional 10 minutes.

After 10 minutes pull it out of the oven and let it sit for about 5 minutes. If it still seems too wet, you can put it back in for a few more minutes. Mine usually doesn’t need to go back in.
